Does everyone else have a big power supply of some sort mounted in the lower half of the fusebox/circuit breaker panel? Or is it some aftermarket addition somebody did before I bought it?

The one in mine (I don't know what is is for yet) runs when connected to "shore power" (i.e., the RV is plugged in to 110VAC). I do know that turning the big switch by the side door (cabin power on/off) changes the speed of the fan, so maybe it is some kind of cabin battery charger, I don't know. It is a switching supply with a big heatsink facing outward when you remove the panel (unscrew the two phillips captive screws accessible behind the push-to-open circuit breaker drop down panel).

My Unity has the big Magnum MM-R series Inverter located  behind\below the lower drawer of the wardrobe, but it doesn't charge batteries from what I understand.

Any wisdom you can share about how all this powers various parts of the RV, especially the ceiling blower system for the AC, and power to the AC and Dometic wall thermostat would be very helpful!

The fan noise you are hearing when plugged into shore power is probably the Converter. On my 2014 Leisure Travel Van Unity the shore power comes into this area under the bench seat and the noise is most likely coming from the converter. The converter is a device that converts the 120-volt AC power from shore power to the 12-volt DC power that the RV's appliances and electronics need, like your 3-way refrigerator and your house lighting. The converter has a fan that helps to keep it cool, and this fan can be noisy, especially if the converter is working hard to convert a lot of power. The Inverter under your passenger side bed does the opposite, inverts 12-volt battery DC to 120-volt AC so some of your lower voltage household appliances can be used in your RV.
